INGREDIENTS :
3 tbsp Oil
2 Cups Cauliflower florets
1 Cup Green Peas
2 Bay leaves
4 tbsp Tomato Puree
2 tbsp Fresh Curd (Yogurt)
"' tsp Sugar
"' Cup Water
Salt to taste
For the Masala :
1 medium Onion
2 tbsp Fresh Coconut, Grated
2 Cloves Garlic
2 tsp Coriander Seeds
1 tsp Cumin Seeds (Jeera)
"' inch Ginger Piece
2 tsp Poppy Seeds (Khus-Khus)
4 Whole Red Chilies
METHOD :
In a microwave safe bowl, combine Oil and the Cauliflower. Cover with a lid and microwave on HIGH for 4 minutes. Remove and keep aside. In the same bowl, combine the Green Peas with 2 tbsp Water and microwave on HIGH for a minute. In another microwave safe bowl, add the remaining 1tbsp of Oil, the Bay leaves and the prepared paste and microwave on HIGH for 2 minutes. Next, add the tomato puree, curd, Cauliflower, Green Peas, Sugar, Water and Salt and microwave on HIGH for a further 4 minutes till the Vegetables are soft.
Serve hot with Phulkas.
