INGREDIENTS :
4 Karela (Dark Green Bitter Gourd)
3 tbsp Tamarind Pulp
1 tbsp Jaggery powder
1 tbsp Coriander Seeds
2 tsp Sesame Seeds
e tsp Cumin Seeds
4 - 5 Dry Red Chilies
e Cup Fresh Coconut Grated
Salt to taste
METHOD :
Slit the Karela horizontally and remove the seeds. Chop into big pieces. To this add Salt and mix well. Set it aside for an hour.
Roast Sesame Seeds until it starts to splutter. Remove and keep aside. Heat one teaspoon Oil in a kadai(wok) and add Cumin Seeds and Coriander. Next add Red Chilies and fry for a minute. To this add Coconut and again fry for one minute. Now grind Sesame Seeds and the other fried spices and Coconut with little water to a paste.
Wash the Karela pieces with water. Cook until it is soft. Now add Jaggery, Tamarind pulp and the masala paste. Mix well. Add Salt and let it cook for 2 to 3 minutes.
Remove to a serving dish and serve with Rice or Phulka.
