Bitter Gourd Sukha Recipe
Bitter gourd does not necessarily mean a bitter meal experience. With the right ingredients and techniques, bitter gourd can actually taste better than most of our regular vegetables. Wondering how is that possible? Then, read on for the recipe.
Bitter gourd sukha is a simple and quick recipe. The main trick behind preparing this recipe is to take the bitterness out of the bitter gourd! The bitter gourd is first marinated with salt and other ingredients and kept aside for an hour or so. This takes away the bitterness from the bitter gourd completely. After that, when it is cooked with other ingredients and spices, the dish tastes simply awesome.

Preparation time: 1 hour
Cooking time: 20 minutes
Ingredients
- Bitter gourd- 4 medium size (cut into medium pieces)
- Onions- 2 big (finely chopped)
- Tomatoes- 2 big (finely chopped)
- Potato- 1 big (cut in small cubes)
- Green chillies- 3 (slit)
- Turmeric powder- ¼ tsp
- Chilli powder- ¼ tsp
- Garam masala- ¼ tsp
- Jeera (cumin seeds)- ¼ tsp
- Ginger garlic paste- ½ tsp
- Grated coconut- 4-5tbsp
- Salt- as per taste
- Lemon juice- 2tsp
- Curry leaves- few
- Oil- 2tbsp
Method
1. Add some salt, chilli powder, turmeric powder and lemon juice to the bitter gourd and keep it aside for about an hour.
2. Then heat enough oil in a deep pan and fry the bitter gourd till crispy and brown in colour. Remove it and keep it aside.
3. Heat some more oil, add cumin seeds, green chillies, curry leaves, ginger garlic paste & onions and fry till golden brown.
4. Add tomatoes to it and fry it for 3 minutes.
5. Add potatoes with enough water and cover it with the lid and cook the potatoes.
6. Now add the crispy bitter gourd, garam masala, grated coconut and salt if required.
7. Serve hot with goan rice and prawn curry.
