Banana Stem Curry With Methi Recipe
Arati duta menthi kura is the original name of this recipe. It is basically a plantain (banana stem) curry which is prepared with methi (fenugreek) leaves which hails from the state of Andhra Pradesh. Not many people are aware that the banana stem can also be made into a delicacy. Down the southern part of India, banana stem is used abundantly in curries.
Banana stem is an extremely nutritious ingredient. It helps in preventing kidney stones, aids weight loss, treats hyper acidity and also prevents urinary tract infection. When teamed up with methi, another healthy ingredient this vegetarian recipe becomes one of the healthiest dish. The sticky layer of the stem has to be removed before you start cooking the plantain or it may cause digestive problems.

So, here is the recipe for banana stem curry with methi. Take a look and give it a try.

Serves: 3
Preparation time: 10 minutes
Cooking time: 20 minutes

All you need
- Banana stem- 1 (cut into roundels)
- Onion- 1 (chopped)
- Green chillies- 2 (slit)
- Methi (fenugreek) leaves- 1 sprig (chopped)
- Cashewnut paste- 1tbsp
- Salt- as per taste
- Turmeric powder- 1tsp
- Red chilli powder- 2tsp
- Oil- 2tbsp + for deep frying
- Coriander leaves- 2tbsp (chopped, for garnish)

Procedure
1. Cut the banana stem into roundels and make sure that you remove the sticky part with your hands. Soak it in water before cooking.
2. Heat the oil for deep frying in a pan and deep fry the roundels till they turn golden brown. Keep it aside.
3. Then heat two tablespoon of oil in another pan and add the chopped onions. Fry till it turns golden brown.
4. Then add the cashewnut paste and fry for 3-4 minutes on medium flame.
5. Add the methi leaves, green chillies, turmeric powder and red chilli powder to the pan and saute for 3-4 minutes.

6. Now add the deep fried banana stem to the curry, salt and saute for another 3-4 minutes till all the ingredients are completely cooked.
7. Once done, switch off the flame and garnish with chopped coriander leaves.
Banana stem curry with methi is ready to be served. You can enjoy this vegetarian recipe with rice and lentils as a side dish.
