Healthy Corn Biryani Recipe
Who does not want to have corns, be it the baked corns, the bhuttas or even corn soups. In winters we all rush to the makeshift stalls to grab a bite on the delicious hot corn. Many of us have corn for evening snacks and savour the corn with a hot cup of tea or coffee. At the same time corn is considered to be a healthy snack and high in nutrition, which are extremely beneficial for you. Corns are basically rich in Vitamins which helps in physiological functions and fight diseases too.
Rice on the other hand, is considered to be the staple food for people around the World. Rice is eaten for breakfast, lunch and even dinner. Rice though is considered to be fattening is liked by many people. It is known to be the dietary fiber and rich in protein and carbs.
Many people get bewildered when they hear a recipe called corn biryani. Corn biryani is a new recipe that is soon catching trend all over. We all have heard and relished corn paratha. Corn biryani, is also one such dish that is prepared using high amount of corn. This rice is very spicy and yet delicious. It is quite a simple recipe and full of nutrition.

Preparation time: 20 minutes
Cooking time: 45 minutes
Ingredients
- Corn- 1½ cup
- Onion- 1 large (chopped)
- Tomato- 2 (finely chopped)
- Ginger garlic paste- 1tsp
- Green chilli- 5 (chopped)
- Oil- 3tbsp
- Ghee- 3tbsp
- Coconut milk- 1 cup
- Water- 3 cups
- Salt- 1tbsp
- Chilly powder- 2tsp
- Turmeric powder- ½ tsp
- Coriander leaves- 2 (chopped)
- Mint leaves- 4 leaves (chopped)
- Garam Masala- 2tsp
- Bay leaf- 1
- Cinnamon Stick- 2
- Cloves -5
- Cardamon -3
- Basmati rice- 2 cups
Procedure
- Soak 2 cups of Basmati rice for atleast half an hour.
- Drain the water and keep aside.
- In a heavy deep vessel heat oil and ghee together and fry bay leaf, cinnamon, cloves and cardamom.
- Add onions and saute till golden brown.
- When onions turn slightly brown, add ginger garlic paste and tomatoes.
- Saute till it becomes soft like a paste.
- Next add green chillies, coriander and mint leaves.
- Now add the corn kernels along with turmeric powder, chilly powder, coconut milk and salt.
- Saute everything until it thickens to a gravy consistency.
- Add 2 cups of water to the gravy and bring it to boil.
- Now add the soaked and drained rice and half spoon salt, mix well. Leave it to cook.
- Garnish with coriander leaves.
Now that your corn rice is ready to eat. Serve it with a gravy or vegetable raita.
