Spicy Baingan Musallam Recipe
Add a little spice to your lunch menu today with this exotic vegetarian recipe of baingan musallam. Baingan is the term for brinjal or eggplant in Hindi. Musallam is obviously a famous gravy which is usually made with meat. However using the same combination of spices for a plain vegetable like brinjal, you can make your meal burst with robust flavours.
This delightful vegetarian recipe of baingan musallam has a rich and creamy texture and a lip-smacking taste which makes it simply irresistible. The combination of cream and the fragrant spices makes this simple vegetarian dish taste absolutely divine.

Ingredients
- Small brinjals- 4-5
- Onions- 2 (finely chopped)
- Ginger-garlic paste- 2tsp
- Chilli powder- 1tsp
- Coriander powder- 2tsp
- Turmeric powder- ½ tsp
- Tomatoes- 2 (chopped)
- Tomato puree- 2tbsp
- Sugar- ½ tsp
- Salt- as per taste
- Cumin seeds- 1tsp
- Fresh cream- 3tbsp
- Coriander leaves- 2tbsp (chopped)
- Oil- for deep frying
- Oil- 2tbsp
Procedure
1. Wash and make slits in the brinjals with a knife.
2. Heat the oil for deep frying in a kadhai and fry the brinjals on a medium flame till they turn golden brown.
3. Once they are cooked, transfer the brinjals to a plate.
4. Heat two tablespoon of oil in a pan and add cumin seeds to it. Allow them to crackle.
5. Add the onions and saute on medium flame till they turn transparent.
6. Then add ginger-garlic paste, chilli powder, turmeric powder, coriander powder and cook for 2-3 minutes.
7. After that add the chopped tomatoes and tomato puree to the pan. Mix well.
8. Add salt, sugar and cook for 4-5 minutes.
9. Now add the fried brinjals and mix well.
10. Add little water to make a semi-thick gravy.
11. Once done, switch off the flame and add the fresh cream to it.
12. Garnish with chopped coriander leaves and serve.
