Dal Dhokli: Gujarati Dal Recipe
Dal dhokli is a famous Gujarati dal recipe. For those who are not familiar with this dish, dhokli is basically the Indian version of homemade pasta. It is prepared using wheat flour along with a mix of spices. 'Dhokli' however should not be confused with 'dhokla' which is a steamed Gujarati snack.
The recipe of dal dhokli consists of two main parts; first the dhoklis are prepared by rolling out thin pieces out of the wheat flour dough, and in the second part they are cooked in a thin and spicy dal. You can also prepare the dhoklis and keep them in the refrigerator and later cook them with the dal and serve. This Gujarati vegetarian recipe is easy to make, tastes extremely delicious and is healthy at the same time.

So, try this unique dal recipe for a change and enjoy the flavour of Gujarat with the delicious dal dhokli.

Ingredients
For the Dhoklis
- Wheat flour- 1cup
- Turmeric powder- ½ tsp
- Chilli powder- ½ tsp
- Salt- a pinch
- Oil- 2tsp
- Water- 1cup
For Dal
- Toor dal- 1cup
- Onion- 1(finely chopped)
- Turmeric powder- 1tsp
- Sugar- 2tsp
- Garam masala- ½ tsp
- Dry mango powder- 1tsp
- Mustard seeds- ½ tsp
- Cumin seeds- ½ tsp
- Cloves- 5
- Dry red chillies- 2
- Curry leaves- 8
- Hing (asafoetida)- a pinch
- Oil- 1tbsp
- Salt- as per taste
- Water- 3 cups
- Coriander leaves- 1tsp (chopped)
Procedure
- For the dhoklis, take wheat flour, salt, turmeric powder, chilli powder and oil in a wide container and knead a smooth and stiff dough with water.
- Divide the dough into 4 or 5 pieces. Then roll out the dough into a rectangle shape about as thick as a chapatti.
- Using a sharp knife, carefully cut out small rectangle shaped pieces about the size of a biscuit.
- Once done, keep the dhoklis aside.
- Now clean and wash the toor dal. Pressure cook it with chopped onions, salt and turmeric powder with water for about 3-4 whistles on a medium flame.
- Once done, keep the dal aside to cool.
- Now heat oil in a pan and add mustard seeds, cumin seeds, dry red chilli, curry leaves, cloves, hing one by one and fry for about a minute.
- Once the dal cools, pour it into this pan and mix well.
- Add sugar, garam masala, dry mango powder and cook for 2 minutes.
- Now add the dhokli pieces to the dal carefully.
- Cook for about 5 minutes on a medium flame.
- Once done, switch off the flame and garnish the dal dhokli with chopped coriander leaves.
Serve the dal dhokli with steamed rice. This exotic dal recipe tastes heavenly when served hot.
