Set Dosa is made with rice, urad dal and Poha. It is the atukulu or poha which makes this yummy dosa soft, spongy and smooth. When it comes to set dosa the texture of the dosa is very important. It is not like any other dosa you enjoy at the hotel. Set dosa needs to be soft in comparison to idlis.
Many also refer this yummy fluffly dosa to Sponge dosa. To enjoy this masala set dosa it can be served with Vegetable Saagu or a variety of chutney combinations.
Here is how you prepare set dosa, take a look:

Serves: 4
Preparation Time: 20 minutes
Cooking Time: 15 minutes
Ingredients
- Idli Rice - 1 cups
- Raw rice - 1 cup.
- Urad dal - 1/2 cup.
- Poha/Avalakki - 1/2 cup.
- Fenugreek seeds - 1 tsp
- Oil - 2 tbsp
- Salt to taste
Procedure
- To begin this recipe, you need to soak idli rice, raw rice, urad dal and fenugreek seeds before 5 to 6 hrs before grinding all these ingredients together.
- Important: Soak the poha separately in another bowl.
- After grinding the ingredients well together in a grinder. Add in a little water and salt to taste. Make sure not to add too much of water since the consistency should be moderate.
- Allow the batter to ferment for 8 to 9 hours or even overnight if possible.
- When the batter is ready, place a dosa tawa on a medium flame. When hot, pour the dosa and spread it like thick circular disc. Sprinkle a little oil on the dosa to allow it to cook. When one side is cooked flip the dosa, remove it from tawa when both sides are cooked to a slight brown in colour.
