Sweet Delight: Rava Kesari (Video)
Rava kesari is a rich and delicious Indian dessert. Kesar means saffron and anything made with kesar is bound to be an aromatic dish. Rava kesari is made on very special occasions in South Indian homes.
As Indians love desserts and thus sweet dishes are an integral part of our cuisine. In average Indian homes, desserts are not just prepared on festivals, they are a part of the regular menu. So if you feel like giving your family a quick treat, you can always choose to make rava kesari. The recipe for rava kesari is pretty easy. In fact, rava kesari is a recipe that can be prepared in just 10 minutes if you follow the right procedure.
Serves: 4
Preparation Time: 5 minutes
Cooking Time: 10 minutes
Ingredients
- Ghee- 3tbsp
- Rava- 1 cup
- Powdered sugar- 1 cup
- Kesari powder/ Food colour- ½ tsp
- Oil- 3tsp
- Cashew nuts- 10g
- Cardamom pods- 4 (crushed)
- Water- 2 cups
Procedure
- Heat a tablespoon of ghee in a deep bottomed pan. When it melts, add rava to the pan and stir well.
- Saute the rava on low flame for about 2 minutes until you get a fried smell.
- Then remove the fried rava into a bowl and place the pan on the flame again.
- Add water to the pan and bring it to boil. Add kesari powder or food colour to it. Cover the pan and let it boil for another 2 minutes.
- Now add the fried rava into the pan and stir continuously for 2-3 minutes.
- When rava absorbs the water and thickens, then start adding little sugar at a time.
- Keep stirring in the sugar until all the sugar is over. Cover and cook for 2 minutes.
- Meanwhile heat oil in a shallow pan. When it starts steaming add cashew nuts to the pan and fry them until golden-brown.
- Then add ghee to rava and sprinkle crushed cardamom pods to season it.
- Garnish rava kesari with fried cashew nuts.
It is very easy to prepare rava kesari if you follow the recipe shown in the video. Serve it hot or chilled.
