Quick & Easy Badam Milk Puri
Badam milk puri is a South Indian dish that is a must have this Diwali. The festive season is getting over, and the badam milk puri is the perfect way to end it. Soaked in milk, ghee and sugar, badam milk puri is a traditional dessert that your loved ones will definitely want to have this festive season. This dish is also called paal boli in certain parts of south India.
Badam milk puri is a unique dish. The fried puris are immersed in flavoured milk till it gets soft enough to melt in your mouth. Wondering if it is a tough task to make these badam milk puris on a festive day? Check out this quick and easy badam milk puri recipe from our food expert Usha Srikumar.
Serves- 2
Preparation time: 25 minutes

All you need
Milk- 1 litre
Wheat Flour- 2 cups
Sugar- 2 cups
Ghee- 1 tbsp
Almonds- 10
Yellow food color- one pinch
Almond essence- 4 drops
Dusting flour
Saffron- 2 pinches (optional)

Procedure
For Puris
1. Add a teaspoon of sugar and melted ghee into the flour.
2. Add water and knead the the flour till it becomes a stiff dough.
3. Set it aside for 15 minutes.
4. Later, make the dough into small balls and roll out round puris.
5. In the meantime, heat oil in a tawa for deep frying.
6. Once the puris are fried, put them into a plate.
For Badam Milk
1. Soak the almonds in hot water for an hour. Once the almonds are soaked, remove the skin.
1. After that, grind the almonds into a paste by adding a little milk.
2. Add the almond paste to the milk.
3. Boil the milk and simmer it for a few minutes.
4. When it is done, add the food colour and essence.
5. Add the saffron dissolved in warm milk.
Pour the mixture into the puris, and relish the taste of these badam milk puris.

- According to Ayurveda, almonds help in refreshing the nervous system.
Tips
Put the fried puris into a plate covered with tissue paper. The tissue paper will absorb the extra oil from the puris. These drained puris are much healthier for you.
