Janmashtami Special: Malai Ladoo
Malai Ladoo is a traditional recipe that is prepared for many Indian festivals and auspicious occasions. It is prepared from the cream that is obtained from evaporating sweetened milk. Malai Ladoo is often prepared as an offering to the gods. The malai Ladoo can be made using not just a malai base but aslo using Mawa and condensed milk. In the case of condensed milk, sugar isn't necessary for the recipe.

Serves: 5
Preparation Time: 5 minutes
Cooking Time: 15 minutes
Ingredients:
Paneer- 400 grams (crumbles) (2 cups)
Malai- 1 cup ( taken from home milk)
Powdered Sugar- 1 cup
Cashew Nuts- 2 tbsp
Pistachios- 1 tbsp
Green Cardemom- 4 pcs
Saffron- 25 to 30 threads
Yellow Colour
Procedure:
1. Add the Malai ( Cream) in the pan and begin heating. Cook for about 5-6 minutes until the heating makes it thick.
2. The Ladoos can be made using Mawa and Paneer as well- in place of Malai and Paneer.
3. If using Mawa instead of Malai, almost the same quantity of Mawa (around 200 grams) has to be used. Besides, condensed milk can also be used in place of Mawa and Malai. If condensed milk is used, the quantity of condensed milk has to be 400 grams.
4. In case of Mawa, first add 1 tbsp of ghee before adding Mawa. Heat for about 3-4 minutes.
5. Add the crumbled Paneer to the mixture.
6. Stir continuously on medium flame and cook for about 6 minutes till the mixture becomes thick.
7. Cut the cashwes, pistachios and powder the cardamom.
8. Add some melted malai in the saffron and add the mixture to the main mixture.
9. Roast for some more time upon adding the saffron mixture.
10. Add a pinch of yellow colour to the mixture.
11. Cook until saffron and yellow blend well with the mixture.
12. Once done, put the mixture on a plate. Allow it to cool.
13. Now add the sugar and mix well.
14. Add the cardamom powder and sliced cashew nuts.
15. Mix well. Make ladoos from the mixture.
16. Garnish with pistachios and you are all good to go.
