Gajar Ka Halwa With Khoya Recipe
It is the season of carrots. So there is not doubt that carrots will be there in your healthy diet. Be it in the salad, side dishes or in dessert, carrots are one healthy vegetable that can be included in your diet. When we talk about desserts using carrot, what strikes our mind is gajar ka halwa. It is one of the Indian sweet dishes which is loved by everyone.
Gajar ka halwa might be a time consuming sweet dish recipe, but the flavour and likings towards the halwa can make you wait and cook without any hassle. Gajar ka halwa is prepared in two different methods; one using milk and second using khoya (mawa). Khoya is a milk product which is thickened and prepared to add in Indian sweet dishes like gulab jamun and gajar ka halwa. Gajar Ka Halwa Using Khoya Recipe:

Serves: 3-4
Preparation time: 10 minutes
Cooking time: 75 minutes
Ingredients
Carrots- 1 kg (grated)
Milk- 2 litres
Khoya- 150gms
Sugar- 1 cup
Ghee- 2tbsp
For Garnishing
Cashew nuts- 5-6 (halved)
Almonds- 5-6 (sliced)
Cardamom powder- 1 pinch
Procedure
1. Boil milk in a deep bottomed pan.
2. Stir at short intervals to prevent it from sticking. Boil for about 45-50 minutes till the milk thickens.
3. Once the milk looks thick and is creamy, add the grated carrots and cook till the milk is absorbed completely.
4. It will ideally take more 45-50 minutes for the milk to be absorbed by the carrot. Stir frequently.
5. Once the milk is absorbed, turn off the flame and keep the pan aside.
6. Heat ghee in another deep bottomed pan. Add the carrots and mix well. Cook for 10-15 minutes on a low flame and then add khoya and sugar. Cook on a low flame for 15-20 minutes.
7. Stir till the sugar is dissolved. Once done, put the pan off flame.
Gajar ka halwa with khoya is ready to eat. Garnish with the nuts and serve this Indian sweet hot.
