Ginger Pancake Recipe For Christmas Eve Breakfast

Cooking Time: 15 minutes
Ingredients
- Flour - 2 cups
- Sugar - 1 cup
- Baking powder - 2 tbsp
- Baking soda - ½ tsp
- Cinnamon - 1 tsp
- Ginger - 2 tsp
- Nutmeg - ¼ tsp
- Cloves - 3
- Salt to taste
- Milk - 1 cup
- Molasses - 2 tbsp
- Eggs - 2 (beaten)
- Buter - 2 tbsp
- Oil - 1 tbsp
Procedure
- You need to first whisk the ingredients in a bowl (flour, sugar, baking powder, baking soda, cinnamon, ginger, nutmeg, cloves, salt). Make sure to mix the ingredients well with each other.
- Take a separate bowl, place all the wet ingredients in it ( milk, molasses, eggs) and whisk it together with the help of an egg beater.
- Now add both the mixtures together and combine it well.
- Let the batter stand in for about 15 minutes allowing it to thicken.
- Now take a pan, grease it with a little oil and gently place the 2 tablespoon of batter on the pat when hot. Allow the batter to cook well over the medium flame for about 2 to 3 minutes.
- When the batter/ginger pancakes start to turn a golden brown, flip it onto the other side allowing it to cook. Wait for another 3 minutes and then remove from the flame.
- Follow the same procedure with the entire batter.
- You can top the ginger pancakes with maple syrup or with honey. To make it all the more colourful you can also add chopped fruits on top.
