Classic Christmas Cake For Christmas
As Christmas is just days away, it is the time to make cakes. There may be many cake recipes for Christmas but nothing can beat this “Classic Christmas Cake recipe". This recipe, also called fruit cake recipe is a very delicious recipe prepared with rich fruit ingredients. Ingredients:
1.500 g currants
2.200 g raisins
3.50 g cherries (syrup)
4.50 g mixed candied peel (citrus fruit boiled in sugar)
5.3 tsp brandy
6.225 g flour (all purpose flour, sifted)
7.Pinch of salt
8.1/4 tsp nutmeg
9.1/2 tsp pudding spice
10.225 g butter (unsalted)
11.225 g sugar (preferably brown)
12.4 Eggs
13.50 g almonds (chopped)
14.1 tsp Black treacle (or black molasses)
15.1 Grated lemon (zest)
16.1 Grated orange (zest)
17.100 g blanched almonds (optional)
Method:
1.Grease and line the wax paper or parchment paper in a cake tin.
2.Start making cake the night before you want to bake it.
3.Mix the dried fruit and mixed peel with brandy and cover it with thin cloth and set aside for 12 hours.
4.Thoroughly mix flour, salt and spices in a bowl and sieve it to get good airing.
5.Whisk butter and sugar together until its soft and fluffy.
6.Beat the eggs in a separate bowl and add them to the butter sugar mixture, blend well.
7.Now, slowly add the egg mixture into the flour and blend thoroughly.
8.Mix flour with fruits, peels, chopped nuts and black treacle, and finally the grated lemon and orange zests.
9.Transfer the cake mixture into the prepared tin, spread it out evenly with the help of a spoon.
10.Preheat the oven to 140ºF.
11.Garnish blanched almonds in circles or any way you prefer. Finally, cover the top of the cake with two wax papers making a hole in the center.
12.Bake the cake in the preheated oven for 5 hours and set aside for half an hour to cool.
13.Sprinkle brandy on top of the cake and store in an airtight tin. Tasty classic Christmas cake ready to eat.
