Coriander And Lemon Clear Soup Recipe
Soups are very commonly made in every household during the winters. There are many soup recipes that you can prepare at home within 20 minutes. Tomato soup is one of the most common soup recipes as it is quick and tastes delicious as well.
However, as winter is all filled with green vegetables, you can add some in your soup and prepare a delicious and tangy treat to fight winter chills. Coriander leaves have numerous health benefits like it aids digestion, lowers blood glucose levels in diabetics and lowers bad cholesterol (LDL) and raises good cholesterol (HDL) to name a few. So, having coriander leaves in your winter diet is a healthy option.

Coriander Lemon Clear Soup Recipe:

Serves: 2
Preparation time: 10 minutes
Cooking time: 15 minutes
Ingredients
1. Chopped coriander leaves- 2 tbsp
2. Onion- 1 (chopped)
3. Spring onion bulb- 1 (chopped)
4. Ginger- 1 inch (minced)
5. Garlic- 1 pod (minced)
6. Lemon juice- 2tbsp
7. Vegetable stock- 4 cups
8. Black peppercorns- 4-5 (crushed)
9. Salt- as per taste
10. Butter- 1tsp
Procedure
1. Melt butter in a frying pan. Saute the onion, ginger, garlic and spring onion bulb on a low flame.
2. Mix and cook till they become translucent. It should take about 4 minutes for the vegetables to cook.
3. Now pour the vegetables stock into the pan and bring it to boil.
4. Add the coriander leaves, lemon juice, salt and black peppercorns and mix well.
5. Once the soup thickens, turn off the flame.
Coriander lemon clear juice is ready to serve. Garnish with some butter and have it hot.
