Mouthwatering Boti Kebab Recipe
Awadhi cuisine is a foodie's haven. The delicious biryani, kulchas, parathas and of course, the kebabs of Awadh are to die for. The Nawabs of Awadh were famous for their gastronomic sophistication and love for food. That is why the royal kitchens can boast of producing some of the most delectable recipes which make Indian cuisine stand out from rest of the world.
Kebabs of Awadhi cuisine need no introduction. The Kakori kebabs, the melt-in-mouth Gelawatis, boti kebab etc. are some of the most popular kebabs for which Awadhi cuisine is known throughout the world. So, why not try something royal on this weekend?

Here is the recipe for the famous boti kebab. This recipe is easy and does not require too much of hard work. But once it is prepared you definitely can;t stop just at one. So, spare some time on this weekend and try out this exotic kebab recipe and do not forget to make it in large quantities as it will vanish as soon as you put them on plate.

Serves: 4
Preparation time: 4 hours
Cooking time: 40 minutes
Ingredients
- Mutton- ½ kg (boneless, small pieces)
- Unripe papaya paste- 2tbsp
- Ginger-garlic paste- 2tbsp
- Green chilli paste- 1tsp
- Red chilli powder- ½ tsp
- Garam masala powder- ½ tsp
- Salt- as per taste
- Butter- ¼ cup (melted)
- Onion rings- for garnish
Procedure
1. Wash the mutton cubes properly.
2. Marinate the mutton pieces with papaya paste, ginger-garlic paste, green chilli paste, red chilli powder, salt and garam masala powder.
3. Keep the marinated mutton in refrigerator for 3-4 hours.
4. After that, pressure cook the mutton with one cup of water. Wait for 4 whistles.
5. Then carefully release the pressure.
6. Check if there is any liquid remaining inside the cooker. If yes, then cook till the water evaporates completely.
7. Now transfer the mutton pieces to a bowl and then grill them in a griller or pan.
8. Apply butter to all the mutton pieces and cook on low flame for 15-20 minutes till they are completely cooked.
9. Once done, transfer the kebabs to a platter and garnish with onion rings.
Serve the boti kebabs with green chutney. The taste of the boti kebabs just cannot be described in words.
