Herb Roasted Chicken: Christmas Recipe

As this is a microwave recipe the cooking procedure will be hassle free. No smoke, no grime, just juicy chicken. This recipe for roast chicken doesn't require marination so you'll be done in 90 minutes.
Ingredients For Herb Roasted Chicken:
1. Whole chicken (with skin) about 2 an half kgs
2. Ground pepper 2 tablespoons
3. Thyme 3 sprigs
4. Parsley or coriander leaves 3 springs
5. Basil 3 sprigs
6. Mint 3 sprigs
7. Oregano 1 tablespoon
8. Rosemary 1 tablespoon
9. Rosemary oil 1 tablespoon
10. Bay leaves 4
11. Butter 20 grams
12. Salt as per taste
Procedure For Herb Roasted Chicken:
- Preheat the oven to 350 degrees and as it heats up continue preparing the chicken for roast.
- Give the chicken a thorough washing under running water. Clean the insides carefully. Brush salt and pepper on the outside and insides of the chicken.
- You can make a few incisions on the insides so that the spices are better absorbed. Do not cut the outer layer because you need the skin intact.
- Gently tug at the skin of the chicken from the breast area. You can make a delicate slice over here when the skin as been loosened from the flesh.
- Stuff the the herbs under the skin and slowly spread it out evenly across the entire chicken. Stuff the cavity with bay leaves and rosemary leaves.
- Brush the chicken with rosemary oil first and then butter it. Dust it with salt and pepper thoroughly.
- Put the chicken on a greased pan and roast for 50 minutes. After that put it on the high rack and grill for 5 minutes on each side to brown it. Give it 20 minutes of standing time.
Serve herb roasted chicken for your special Christmas dinner and get compliments.
