Weekend Spcl: Creamy Kadai Chicken Recipe
Kadai chicken is a favourite dish of most chicken lovers. The chicken is usually cooked in a very light gravy along with a few vegetables. Since the chicken is cooked and served in a 'kadai' which is an Indian pan, this dish is known as Kadai chicken.
You must be wondering that what is special about this recipe. Kadai chicken is a quite known recipe. But here comes the twist. We are cooking this version of Kadai chicken with a dash of cream and yogurt which adds a completely different and awesome flavour to this sumptuous dish.

Cooking time: 30 minutes
Ingredients
- Chicken- 1kg
- Onions- 5 (sliced)
- Ginger-garlic paste- 1tbsp
- Tomatoes- 2 (diced)
- Green chillies- 2 (slit)
- Capsicum- 1 (diced)
- Tomato puree- 2tbsp
- Coriander powder- 2tsp
- Cumin powder- 2tsp
- Turmeric powder- 1tsp
- Red chilli powder- 1tsp
- Salt- as per taste
- Garam masala powder- 1tsp
- Cinnamon stick- 1
- Green cardamoms- 4
- Cloves- 4
- Bay leaf- 1
- Cumin seeds- 1tsp
- Fresh cream- 3tbsp
- Oil- 2tbsp
- Coriander leaves- 2tbsp (chopped for garnish)
For Marination
- Yogurt- 250gms
- Ginger-garlic paste- 1tbsp
- Coriander powder- 2tsp
- Cumin powder- 2tsp
- Turmeric powder- 1tsp
- Red chilli powder- 1tsp
- Salt- as per taste
- Garam masala powder- 1tsp
Procedure
1. Wash the chicken pieces thoroughly with water.
2. Marinate the chicken pieces with all the ingredients mentioned under 'for marination'. Refrigerate the marinated chicken for about 30 minutes.
3. Heat one tablespoon of oil in a pan. Fry the diced capsicum and tomatoes in it for 4-5 minutes with salt.
4. Once done, transfer the capsicum and tomato to a plate and keep it aside.
5. After that, heat oil in a pan and add cumin seeds, bay leaf, cinnamon, cardamoms, cloves and saute for a few seconds.
6. Then add in the sliced onions and fry till they turn golden brown.
7. Add ginger-garlic paste, turmeric powder, red chilli powder, salt, coriander powder, cumin powder, green chillies and fry for 4-5 minutes.
8. Then add the tomato puree and cook on medium flame for another 5 minutes.
9. Now add the marinated chicken pieces and pour the marination mixture into the pan and saute for 7-8 minutes on high flame.
10. Once the water from the chicken dries up completely, lower the flame, add garam masala powder and cook for a few seconds.
11. Add in the fried capsicum and tomatoes. Mix well.
12. Add a cup of water to the chicken to make a thick gravy. Cover and cook on low flame till the chicken is completely cooked.
13. Once the chicken is cooked, switch off the flame and add cream to it.
14. Garnish the chicken with chopped coriander leaves.
Creamy and delicious Kadai chicken is ready to be served. Enjoy this special treat with parathas or jeera rice.
