Bagara Egg Masala: Spicy Egg Recipe
Egg is a versatile item. It can be cooked in a variety of ways. However egg curry is a favourite among most eggetarians. Egg curry in India is made in different ways depending on the region. But all of them taste equally delicious.
Bagara egg masala is a special egg recipe from the royal city of Hyderabad. It is actually an improvised version of the original recipe made with eggplants called 'bagara baingan'. The key to this delicious and spicy recipe is the special 'bagara masala' which adds a wonderful flavour to the dish. As for the taste, let the recipe speak for itself. Cooking time: 20 minutes
Ingredients
- Eggs- 4 (hard boiled)
- Roasted peanuts- 2tbsp
- Sesame seeds- 2tbsp
- Coconut- 1tbsp (grated)
- Cumin seeds- 1tsp
- Fenugreek seeds- ½ tsp
- Dry red chillies- 2
- Garlic- 4 cloves (chopped)
- Curry leaves- 10
- Green chillies- 2 (slit)
- Cumin powder- 1tsp
- Coriander powder- 1tsp
- Turmeric powder- 1tsp
- Garam masala powder- 1tsp
- Tamarind paste- 2tsp
- Salt- as per taste
- Oil- 2tbsp
- Water- 1 cup
Procedure
- Heat one tablespoon of oil in a pan and fry the boiled eggs for 2 minutes. Remove from pan and keep it aside.
- Grind the peanuts, sesame seeds, coconut with a little water into a fine paste and keep it aside.
- Heat oil in a pan. Add cumin seeds, fenugreek seeds, curry leaves, dry red chillies, garlic and green chillies one by one. Fry for a minute.
- Now add the prepared paste of coconut, peanuts and sesame. Fry for 5 minutes on medium flame.
- Add turmeric powder, cumin powder, coriander powder, salt and saute for 3-4 minutes.
- Add water and mix well. Then add the eggs and tamarind paste.
- Lastly add garam masala powder and mix well.
- Once done, switch off the flame and serve.
Bagara egg masala tastes wonderful when served with steamed or jeera rice.
