Mexican Tortilla Soup
The Mexican Tortilla soup owes its new found popularity to Kristen Stewart. This particular chicken soup recipe happens to be superstar Kristen Stewart's favourite food. In fact, Kristen Stewart cooked this food on a popular television show. But if you missed it, no worries. We present to you Mexican tortilla soup with few alterations made to the original recipe.

This chicken soup recipe is actually one of the most typical courses of Mexican cuisine. Mexican tortilla soup has all the exuberance of great Mexican recipe. The amazing flavour of jalapenos, the glorious colour of tomatoes and a lip smacking cheddar cheese to top it all. No wonder this is Kristen Stewart's favourite food in the Mexican menu!

It takes about 20 minutes to make a decent Mexican tortilla soup. Get started with gathering these ingredients.

Ingredients (Serves 4)

Green onion- 4 (diced)

Garlic- 3 cloves (minced)

Tomatoes- 2 (diced and cut into quarters)

Bell pepper or capsicum- 2 (diced and chopped)

Jalapenos- 8 (whole)

Cumin powder- 2tsp

Paprika- 1tsp

Chilli powder- 1tsp

Vegetable oil- 2tbsp

Chicken broth- 2 cups

Cheese (shredded) as per taste

Tortilla- 2 (cut into strips)

Cilantro or coriander leaves (chopped)- 1tbsp

Salt as per taste

Procedure

Heat oil in a deep bottomed pan. Season it with cumin powder and saute the onions and garlic in it for 2 to 3 minutes.

When the raw smell leaves the onions, add bell pepper. Cover and cook for 3 minutes until they soften visibly.

Pour the chicken broth into the pan. Add tomatoes, salt, jalapenos and cook for 10 minutes on a low flame.

Meanwhile roast the tortilla strips in the microwave oven for 2-3 minutes on 80 per cent power.

When Mexican tortilla soup has simmered from the stipulated time, remove it from the flame and add the torillas to it.

Pour it into a bowl; add all spices like paprika and pepper to the soup. Garnish with cilantro and cheese.

Your Mexican tortilla soup is ready to serve. So serve it hot to family and friends and happy sipping!
