Scrambled Eggs With Cheese

Serves: 2

Preparation Time: 5 minutes

Cooking Time: 5 to 7 minutes

Ingredients

  • Eggs- 4
  • Cheese- 2 cubes (preferably Cheddar)
  • Milk- 1tbsp
  • Pepper- 1tsp
  • Oregano- 1/2tsp
  • Parsley or Coriander leaves- 1tbsp (chopped)
  • Mint leaves- 2 (chopped)
  • Thyme- 1 twig (chopped)
  • Basil- 1 twig (chopped)
  • Dried Rosemary- 1/2tsp
  • Salt- as per taste
  • Butter- 1tsp

Procedure

1. Chop the cheese cubes into tiny pieces. You need to cut the cheese finely so that it melts easily while the eggs cook.

2. Break 4 eggs into a bowl; add the cheese to it. Pour some milk into it.

3. Add salt, pepper and oregano to the eggs. Now beat the eggs with an electronic beater or a spoon.

4. When you have whisked a smooth mixture, put a non-stick pan on the gas oven to heat.

5. At this stage, you can either add the herbs to the beaten eggs and stir it. You can also add the herbs when the scrambled eggs with cheese is cooking in the pan.

6. In my experience the latter is a better option as the aromas of the spices are better brought out by it.

7. Now add a blob of butter to the pan; when it melts pour the beaten eggs mixture to the pan.

8. Scramble it immediately with a wooden spoon. You need to keep stirring the mixture for a minute on low flame.

9. Then add all the herbs, namely parsley, thyme, mint, basil and rosemary to the pan. Sprinkle it evenly over the eggs that are hardening now.

10. Cook for another 2 minutes on low flame. The irresistible aroma will let you know that your scrambled eggs with cheese and herbs is ready.

You can relish scrambled eggs with toasted bread or have it plain for breakfast.
