Prawn Stuffed Bell Peppers: Sunday Special

Bored of having dals and curries even on weekends. We have a perfect solution for this problem. A recipe of stuffed bell peppers that is at once Indian as well as Italian. This recipe for Sunday's lunch has a prawn stuffing inside. You will be cooking the prawn stuffing with an ensemble of thrifty Indian spices. But the presentation of the stuffed bell peppers will be very Italiano.

The Italian touch to the stuffed bell peppers comes mainly from the cheese topping on the dish. After you fill out the bell peppers with a prawn stuffing, you will be topping it up with some grated cheese. Guess what, you bake it like a pizza! Isn't this an amazing recipe for Sunday afternoon?

Prawn Stuffed Peppers

Serves: 3
Preparation Time: 30 minutes
Cooking Time: 30 minutes

Ingredients

  • Bell peppers- 6 (green, red or yellow)
  • Prawns- 300 grams (shelled and de-veined)
  • Onion- 1 (chopped)
  • Tomato- 1 (chopped)
  • Garlic pods- 5 (minced)
  • Coriander leaves- 2 sprigs (chopped)
  • Green chillies- 2 (chopped)
  • Garam masala- 1tsp
  • Pepper powder- 1tsp
  • Coriander powder- 1tsp
  • Cheese- 2 cubes (grated)
  • White oil- 1tsp
  • Butter- 2tbsp

Procedure

1. Melt butter in a shallow pan. Season it with pepper powder.

2. Add the prawns and onions to the pan. Saute for 5 minutes on a low flame.

3. Add the crushed garlic, green chillies and tomatoes to the pan. Add garam masala and coriander powder.

4. Sprinkle salt and allow it to cook for 3-4 minutes.

5. Meanwhile chop off the top of the bell peppers. Scoop out the insides of the bell pepper and douse it with oil.

6. When the prawn stuffing gets cooked, garnish it with chopped coriander leaves and remove from flame.

7. Now stuff the bell peppers with the filling you have prepared. Grate cheese on the top and place on a greased baking dish.

8. Bake the bell peppers for 10 minutes at 60 percent power. The oven must be pre-heated to 250 degrees.

Serve the stuffed bell peppers with flavoured rice or a clear soup.
