Vegan White Christmas Slice

Ingredients
- 2.3 oz cocoa butter
- 3/4 cup raw macadamia nuts
- 3/4 cup unsweetened desiccated coconut
- 1/8 tsp fine salt
- 3 tbsp maple syrup
- 2 tsp vanilla extract
- 1/2 cup dried cranberries
- 1/2 cup pistachio nuts
- 1/4 cup currants
Method
- Line a 4 × 8 inch loaf tin with baking paper or cling film and set aside.
- Melt the cocoa butter, either in the microwave or over a double boiler.
- In a blender, pulse the macadamia nuts and coconut until the mixture begins to come together. Transfer this to the melted cocoa butter and add the salt, maple syrup and vanilla.
- Mix well, using the back of a spoon to break down any remaining lumps. Alternatively, blend everything together in a food processor until smooth.
- Fold in the cranberries, pistachios and currants. Spoon the mixture into the prepared loaf tin, smoothing the top evenly. Garnish with extra cranberries and pistachios, if desired.
- Refrigerate for at least 1 hour, or until set. Once firm, remove from the tin and cut into pieces.
Hazelnut Truffles

Ingredients
- 500g dark chocolate (chopped)
- 250g dairy cream
- 40g of butter
- 200g chopped and roasted hazelnuts
Method
- Heat the cream until just hot, then pour it over the chopped dark chocolate.
- Stir gently until the chocolate melts and the mixture is smooth. For an extra silky finish, you may use a hand blender.
- Add the butter and mix until fully incorporated.
- Transfer the mixture to a container and refrigerate for 4-5 hours, or until firm.
- Once set, use lightly oiled hands to shape the chocolate into 20-25 g balls.
- Roll each ball in chopped roasted hazelnuts, then gently smooth into rounds using your palms.
- Place the truffles in paper cups and refrigerate until ready to serve.
Simple to prepare yet rich in flavour, these recipes celebrate the joy of festive baking. A touch of nutty indulgence adds depth to every dessert, making them perfect for Christmas tables, gifting, and sweet celebrations.
