Stir Fry Vegetable Recipe – Healthy Meal Recipe

We have simple vegetable stir fry recipe that is yummy, and can be served with rice, noodles or can just be savoured as it is. It is also a great side dish that goes well with rotis or bread. Check out the following vegetable stir fry recipe.
Vegetable Stir Fry Recipe:
- Red, green, yellow bell pepper – 1 each
- Shallots or onion - 1
- Carrots – 1 large or 2 small
- Green beans – 6-7
- Mushrooms – 6-7
- Baby corn – 4-5
- Garlic – 5-6 cloves (finely chopped)
- Ginger - ' inch (finely chopped)
- Red chillies (fresh or dry) – 3-4 (or more if you want spicier vegetable stir fry)
- 1-2 teaspoon soy sauce
- 1-2 teaspoon vinegar
- 1-2 tablespoon chilli sauce
- 2-3 tablespoon oil
- Salt, pepper and sugar (as per taste)
Method to prepare vegetable stir fry:
- Slice all vegetables length-wise.
- Prepare a stir fry sauce using soy sauce, chilli sauce, vinegar, salt, pepper and sugar. Dissolve the salt and sugar well in the sauce.
- In a wok / pan, heat oil. Remember to swirl the oil around the pan / wok.
- Add the onion, garlic, ginger and chillies and fry well.
- Next tip in the carrots, beans, mushrooms, bell peppers.
- Add half of the stir fry sauce to the vegetable and simmer for a couple of minutes.
- Next add the baby corn, the remaining sauce and simmer again for some time.
- Your vegetable stir fry is ready to be eaten.
Note: Do not make the recipe too dry or too watery. The sauce is added to add extra flavour to the dish accompanying the stir fry vegetables. This vegetarian recipe can be prepared using any vegetables of your choice.
