Simple Sem Aloo Ki Sabji Recipe
Seasonal vegetables are filled with nutrients and are a treat for taste-buds as well. One such vegetable is the green fava beans or what we call in Hindi, sem. Sem is a highly nutritious vegetable which is rich in vitamins, iron, copper, phosphorous and magnesium.
Not many are fond of eating this healthy vegetable because of its bland taste. But if you know the right techniques to cook the vegetable, you can turn into a delectable dish. Sem aloo ki sabji is a simple vegetarian recipe in which the potatoes are cooked with sem and a medley of spices. The amchoor or dry mango adds a little tangy kick to the recipe and makes it taste heavenly.

Cooking time: 20 minutes
Ingredients
- Sem (green fava beans)- 500gms (de-veined and cut into medium sized pieces)
- Potatoes- 3 (diced)
- Tomatoes- 3 (chopped)
- Ginger- 1 medium piece (chopped)
- Kala jeera (onion seeds)- 1tsp
- Jeera (cumin) powder- 1tsp
- Turmeric powder- 1tsp
- Red chilli powder- 1tsp
- Amchoor (dry mango) powder- 1tsp
- Salt- as per taste
- Oil- 2tbsp
- Water- 1 ½ cups
- Coriander leaves- 2tbsp (chopped for garnish)
Procedure
1. Wash the sem with water and then cut it into medium sized pieces.
2. Heat oil in a pan and add the kala jeera. Saute for a few seconds.
3. Add the chopped ginger and fry for a minute on medium flame.
4. Then add the potatoes, sem and fry on medium flame for 4-5 minutes.
5. Then add the tomatoes to the pan and saute for another 2-3 minutes.
6. Add salt, turmeric powder, red chilli powder, jeera powder, amchoor powder and cook for 5-6 minutes.
7. Now add water, cover and cook for 7-8 minutes on low flame.
8. Once done, remove the lid and allow the water to dry up completely.
9. Switch off the flame and garnish with coriander leaves.
Simple yet delicious sem aloo ki sabji is ready to served. Enjoy this vegetarian recipe with rotis or steamed rice.
