Kheer Ki Sabzi
INGREDIENTS :
500gms Cucumber peeled
2 tsp Red Chili powder
2 tsp Coriander powder
1 tsp Amchur (Dry Mango) powder
2 tbsp Ghee (Clarified Butter)
2 tsp Ginger, Chopped
4 - 5 Green Chilies, Slit lengthwise
2 tsp Rock Salt
1 tsp Sugar
2 tbsp Coriander leaves, finely chopped
METHOD :
Cut the Cucumber into cubes and remove the seeds. Set aside. Make a paste of Red Chili powder, Coriander powder, Amchur powder and Rock salt with little water. Heat the Ghee in a kadai(wok) and add the chopped Ginger and saute for a minute. Add the Green Chilies, saute and add the diced Cucumber and toss. Next add the spice paste, Salt and Sugar and cook, stirring until the Cucumber is soft. If required add more water.
Remove to a serving bowl and garnish with chopped Coriander leaves. Serve hot with Roti's.
