Crispy Karela Fry Recipe With Coconut

Karela or bitter gourd is the most hated vegetable, especially among kids. But it is also one of the best vegetables when it comes to your health. Bitter gourd is an excellent option for diabetic patients, good for your skin and a wonder medicine for most of your health problems. But most of us do not want to eat this healthy veggie because of its terrible bitter taste.

What if we tell you that you can eat bitter gourd without the bitter taste? Yes, today we have a wonderful recipe of karela which is prepared with coconut. The bitter taste is removed by marinating the bitter gourd for a few minutes and then deep frying till it turns crisp.

Ingredients

  • Karela (bitter gourd)- 6 (cut in thin round circles)
  • Chana dal- 1tbsp
  • Cumin seeds- ½ tsp
  • Mustard seeds- ½ tsp
  • Curry leaves- 7-8
  • Dry red chillies- 3
  • Garlic cloves- 5
  • Coconut- ½ cup (grated)
  • Turmeric powder- ½ tsp
  • Red chilli powder- 1tsp
  • Salt- as per taste
  • Oil- for deep frying
  • Oil- 2tbsp

Procedure
1. Marinate the sliced bitter gourd pieces with salt and turmeric powder for about 10-15 minutes. Keep it aside.
2. After that squeeze the juice out of the bitter gourd with your hands and keep it aside.
3. Heat the oil for deep frying and fry the bitter gourd slices in it for 4-5 minutes on medium flame, till they turn brown and become crispy.
4. Transfer the fried bitter gourd pieces to a plate and keep it aside.
5. Grind the coconut, garlic cloves and red chilli powder together in a mixer into fine powder.
6. Then heat two tablespoons of oil in a pan and add the cumin seeds, chana dal, mustard seeds, dry red chillies, curry leaves one by one. Fry for a minute.
7. Add the powdered coconut mixture to the pan and cook for another 3-4 minutes.
8. Now add the deep fried bitter gourd pieces to the pan and mix well.
9. Add salt and fry for a few seconds.
10. Once done, switch off the flame and serve.

Crispy karela fry is ready to be served. Enjoy this crispy treat with steamed rice and dal.
