Bengali Style Mixed Vegetable Curry
Winter is the time for greens. You see green vegetables all around. Ah! What a bliss it is to sit by the balcony and enjoy a hot, veggie meal under the winter sun. Nothing can match this experience. Since, we find almost every kind of vegetable in the market during this season, why not find ways to make them more interesting to your taste-buds? Well, we are here to help you out with that part!
Bengali curries are always one of a kind. The unusual mix of ingredients make the Bengali recipes a delightful treat for everyone. Today, we have another exotic Bengali recipe of mixed vegetable curry which is simple, easy and is great for your stomach. We say this because there is hardly any spice used to prepare this curry. You just need a good amount of onion seeds for this dish which is the most essential part of the recipe.

So, let us have a look as to how to prepare this Bengali style mixed vegetable curry.

Preparation time: 15 minutes
Cooking time: 20 minutes
Ingredients
- Potatoes- 2 (peeled and diced)
- Spinach- 1 sprig (chopped)
- Carrot- 1 (diced)
- Brinjal- 1 (medium sized, diced)
- Drumsticks- 2 (cut into medium sized pieces)
- Green peas- ½ cup
- Ginger- 1 medium sized piece (grated)
- Kala jeera (onion seeds)- 2tbsp (powdered)
- Onion seeds- 1tsp
- Turmeric powder- 1tsp
- Salt- as per taste
- Oil- 2tbsp
- Water- ½ cup
Procedure
- Wash all the vegetables properly and keep it aside. Keep the diced potatoes soaked in salt water to avoid blackening.
- Heat oil in a pan and add one teaspoon of onion seeds.
- As the seeds start crackling add the grated ginger and fry for a minute.
- Then one by one add carrots, potatoes, drumsticks, green peas and fry for 4-5 minutes on a medium flame.
- Now add the chopped spinach, turmeric powder and salt. Mix well.
- Cook for about 5-6 minutes on a medium flame.
- Add water if needed. Cover and cook on low flame for about 8-10 minutes.
- Once done, remove the cover and check if the vegetables are completely cooked.
- Once the vegetables are cooked, switch off the flame and serve.
