By Devaki

1. Sesame seeds (black preferable) – 400 gm
2. Jaggery or brown sugar- 100 gm
Method:
1. Roast sesame seeds in a pan, over medium heat until they start popping. (Do not over toast it- It will taste bitter). Remove from the stove and spread it on a large plate.
2. In a separate pan, heat jaggery and a few table spoon of water and make a syrup out of it. The syrup should be thick with the consistency. (To check the consistency, pour a drop of the syrup into a cup of cold water. It will become a soft ball).
3. Pour the syrup to the sesame seeds.
4. When the temperature cools down where your hands can withstand the heat, grease your hand with ghee or rice flour. Make sesame to even-sized balls using the hand. Yummy tasty ellunda is ready to serve.
