Thandai Ice Cream: Holi Recipe
Holi is almost here. The Hindu festival of colours is incomplete without special delicacies. From Bhang to Thandai, there are numerous Holi recipes that are prepared in every household.
Apart from sweets, you can also prepare the most cherished drink, Thandai. Thandai is prepared with milk, kesar, pistachios, fennel seeds etc. The beverage is also mixed with bhang (cannabis) to get intoxicated.

Thandai Ice Cream: Holi Recipe

Serves: 8
Preparation time: 15-20 minutes
Ingredients
1. Milk- 1 ltr
2. Sugar- 300gms
3. Cornflour- ½ cup
4. Fresh cream- 1 ½ cups
5. Saffron- a few strands
6. Almonds- ½ cup
7. Fennel seeds- 1tsp
8. Cardamom- 3-4 (powdered)
Procedure
1. In a small bowl, dissolve the cornflour with 1/4th cup cold milk. Keep it aside.
2. In another small bowl, heat milk. When it is warm, add saffron strands and keep aside.
3. Now, take a deep bottomed pan and boil the rest of the milk. Add sugar and stir till it dissolves.
4. Pour the cornflour with dissolved milk and stir continuously till the coating looks a little thick.
5. Turn off the flame and let it cool.
6. Add the almonds, fennel seeds, cardamom and mix well. Strain with a sieve.
7. Now add the saffron and fresh cream. Mix properly and pour the thandai mixture in freezer-proof dish. Deep freeze for about 5-6 hours.
Thandai ice creams are ready to eat. Enjoy the festival of colours with some delicious delicacies.
