Father's Day Special: Blueberry Streusel Muffin
Who doesn't love muffins? How joyful it is to sink your teeth into the moist blueberry muffins topped with a delicious streusel. Nothing can match this delight. For those who are new to this term 'streusel' is the crumb topping generally made with butter, flour and sugar which makes the top of the muffin crunchy.

Ingredients
For the muffins
- All purpose flour- 2 cups
- Baking powder- 1½ tsp
- Baking soda- 1/4 tsp
- Salt- 1/4 tsp
- Unsalted butter- 115 gm
- Sugar- 1 cup
- Eggs- 2
- Vanilla extract - 1tsp
- Yogurt- 1 cup
- Blueberries- 2 cups
Ingredients
For the streusel topping
- Sugar- 4tbsp
- All purpose flour- 1tbsp
- Olive oil- 2 tsp
Method of preparation
For the streusel topping
Mix all the ingredients and keep aside.
Method of preparation
For the muffins
1. Pre heat the oven to 180 degree C.
2. Line a muffin tin with paper liners.
3. Mix flour, baking powder, baking soda and salt in a bowl.

4. Add sugar and butter in a bowl and whisk till light and fluffy.
5. Add eggs, one at a time and mix well.
6. Add yogurt and vanilla extract and mix well.
7. Add the flour and whisk till just combined.

8. Fold in the blueberries.
9. Pour the batter in the muffin cups, till 1/3 rd full.
10. Sprinkle the streusel topping evenly on top.
Method of preparation
11. Bake for 20-25 minutes till a tooth pick comes out clean.
12. Remove from the pan and cool on a wire rack.
