Indian microwave kutchi chicken rice recipe
Ingredients
8 medium pieces of chicken
2 cups basmati rice
6 cups water
2 cinnamon cloves
2 cloves green cardamoms
2 tbsps chopped raw papaya peel
1 tbsps chopped ginger
4 chopped green chillies
1 cup mix of chopped coriander and mint leaves
2 tbsps yogurt
2 chopped onions
8 curry leaves
2 tbsps lime juice
2 tbsps mixed fried nuts and raisins
1 tsps saffron soaked in a little milk
2 tbsps ghee or butter
salt to taste
Directions to make kutchi chicken rice recipe:
- Grind the raw papaya peel, green chillies, ginger, mint and coriander leaves to make a fine paste. Mix this paste with yogurt and salt. Cut the chicken pieces and rub this paste into them. Marinate in the refrigerator for at least four hours.
- In a large vessel combine the rice, water, half the whole spices, salt and cook till the rice is half-done. Drain the excess liquid and spread the rice on a plate to cool.
- Heat butter or ghee in a heavy-bottomed pan till hot and fry the remaining whole spices for a few seconds. Add the chopped onions and fry on medium level till it turns golden brown.
- In a large heavy-bottomed pan add some hot ghee or butter, the chicken with paste which was marinated in fridge, a layer of rice topped with a portion of the nuts, lemon juice, curry leaves and saffron milk. Repeat this layer till the mixture finishes. Make sure the topmost layer is of rice topped with ghee or butter, nuts, lemon juice, curry leaves and saffron milk.
- Spread the aluminum foil on the top of the pan and cover it with a tight fitting lid. Now cook on high level for about 5 minutes. Reduce the heat to low level and cook it for about 45 minutes
