Thandai Recipe For Holi

To make thandai, you need to add saffron and 1 tbsp warm milk in a small bowl and keep it aside for a few minutes.

STEP 1

Once the milk is boiled, add sugar to a deep saucepan.

STEP 2

Take the milk and refrigerate till it is cold and keep it aside.

In a deep mixing bowl, add nuts (almonds, cashews, pistachios), watermelon seeds, poppy seeds, fennel seeds, black peppercorns, cinnamon, cardamom, rose petals and enough water.

STEP 5

Keep aside the mix for atleast 2 hours and then collect the drained water in a pan instead of discarding it.

STEP 6

In a mixer, blend the mix using ¾ cup of soaked water till it becomes smooth.

STEP 7

Again, add cold milk, paste and saffron-milk mixture in a big mixer jar and blend till everything comes together.

STEP 8

Pass the mixture through a strainer to make it smooth.

STEP 9

Take 6 equal glasses and pour equal quantities of thandai into them.

STEP 10

You can garnish thandai with chopped pistachio and saffron strands and serve it  chilled.
