Vegetable upma is a traditional South Indian breakfast dish. Upma, or khara bath, is usually paired with kesari bath and together, this dish is called 'chow chow bath'.

Upma is prepared by initially frying the rava and then adding it to the mixture of boiling water. Adding vegetables to this dish is optional; whereas, in our recipe, carrots, capsicum and peas are added to make the upma more healthier and tastier.

Upma is a quick and easy-to-make breakfast dish. But it is also eaten as a dinner meal occasionally. The amount of oil used in this dish is more, as the rava and vegetables absorb it completely.

Ingredients
  • Oil - 10 tbsp

    Mustard seeds - 1 tsp

    Urad dal - 1 tsp

    Chana dal - 1 tsp

    Curry leaves - 6-8

    Ginger - 1 inch (grated)

    Coriander leaves - ¼th cup

    Coconut - ½ cup (grated)

    Onion - 1 cup (chopped)

    Capsicum - ½ cup

    Green chillies - 5-6 (slit)

    Lime juice - half a lemon

    Carrots - ½ cup (chopped)

    Green peas - 1/4 th cup

    Semolina (Sooji) - ¾ th bowl (medium sooji)

    Salt - ¾th tbsp

    Water - 3 bowls

How to Prepare
  • 1. Add semolina in a heated pan.

    2.Dry roast this for about 3-5 minutes. The colour of the semolina should turn to slightly brownish.

    3.Once done, transfer it into a bowl and keep it aside.

    4.Add oil in a heated pan.

    5.Add a teaspoon of both, mustard seeds and urad dal.

    6.Then, add chana dal and grated ginger.

    7.Stir it well.

    8.Add the curry leaves and the slit green chillies. Stir once.

    9.Add the chopped onions and mix it well for half a minute until the onions turn translucent in colour.

    10.Add the chopped carrots.

    11.Mix well and allow it to be cooked for a minute.

    12.Then, add the chopped capsicum and green peas.

    13.Add around 3 bowls of water. The proportion of water ought to be double to triple according to one's preference.

    14.Add the grated coconut and salt.

    15.Cover it with a lid and allow it to boil for 8-10 minutes.

    16.Now, open the lid and stir the mixture once.

    17.Add the semolina slowly in order to avoid the formation of lumps.

    18.Stir it well, until every ingredient is mixed with each other.

    19.Cover it with the lid and allow it to cook for 5 minutes until the water evaporates.

    20.Once done, open the lid and add one and a half tablespoons of coriander leaves and mix it well.

    21.Turn off the stove.

    22.Add a tablespoon of lime juice and mix it one last time.

    23.Transfer it into a bowl and serve hot.

Instructions
  • Make sure to fry the rava before the sautéing of the vegetables
  • Chopped capsicum is added lastly, as it cooks fast
  • The fried semolina has to be added slowly to avoid the formation of lumps
  • Garnishing the upma with coriander leaves, grated coconut and lime juice completes the dish with an amazing taste.
