Vegetable bhath is a main course dish of the Kannada cuisine fame. Different kinds of mixed rice recipes are prepared during festivals and celebrations; and mixed vegetable bhath is one among them. The vegetable bhath is prepared by mixing cooked rice with vegetables and a whole load of spices.
The Karnataka-style vegetable bhath is usually cooked with onions, but it can be eliminated during the times of prayers and pooja. This finger-licking bath is a simple and easy-to-make recipe and does not require too much hard work. The bhath masala gives it a unique flavour, which certainly leaves us asking for more.

Rice - 3/4th cup
Water - 3 and 1/4th cups
Oil - 3 tbsp
Hing (asafoetida) - a pinch
Mustard seeds - 1/2 tsp
Split urad dal - 1 tsp
Split chana dal - 1/2 tsp
Turmeric powder - 1/2 tsp
Mixed vegetables (carrot, capsicum, cabbage, potato, etc., chopped) - 1 medium-sized bowl
Salt to taste
Bhath powder - 2 tbsp
Tamarind paste - 1 tbsp
Jaggery - 1/2 tbsp
Coriander (chopped) - 1/4th cup

1. Add rice to a cooker and 3 cups of water to it.
2. Pressure cook the rice for up to 2 whistles and allow it to cool.
3. Meanwhile, add oil in a heated pan.
4. Add hing and mustard seeds.
5. Once it splutters, add the split urad dal, split chana dal and turmeric powder.
6. Stir well until the lentils turn light brown in colour.
7. Then, add the mixed vegetables.
8. Add quarter cup of water.
9. Add salt and stir well.
10. Let it cook for about 5 minutes.
11. Add the bhath powder, tamarind paste and jaggery.
12. Mix well.
13. Sprinkle the coriander leaves and stir well again.
14. Add the cooked rice and mix thoroughly before serving.
- 1.The rice and the water must be of the ratio 1:4, for cooking the rice.
- 2.You could add any vegetables you like to the bhath.
- 3.Grated coconut is an option to give the dish a unique flavour.

STEP BY STEP - HOW TO MAKE VEGETABLE BHATH
