Kesar elaichi shrikhand recipe, also simply known as shrikhand, is an authentic sweet of the Maharashtrian and Gujarati cuisines. It is made by blending hung curd with sugar powder and topped with cardamom, saffron and nuts. The Gujarati/Maharashtrian thali meal is incomplete without having the shrikhand on the plate.

Shrikhand is a quick and simple sweet to make at home and hence is a go-to for festivities and celebrations. It is creamy and smooth in consistency and rich in flavour, and a small amount would fill up the stomach easily. The homemade shrikhand recipe usually goes well with pooris and is a common weekend breakfast option in Maharashtra.

Serves: 1 medium size bowl

Ingredients
  • Thick curd - 500 g

    Powdered sugar - 3 tbsp

    Saffron (kesar) - 8-9 strands

    Rose water - 1 tsp

    Cardamom (elaichi) - 3 pods

    De-shelled pistachios (soaked and sliced) - 2-3 nuts

How to Prepare
  • 1. Take an empty bowl and place the strainer on top.

    2. Double a kitchen cloth and put it on the strainer.

    3. Pour the curd in the cloth, hold up the ends of the cloth and squeeze it gently.

    4. Once the water starts draining, keep it back on the strainer and refrigerate this for 6-8 hours.

    5. Take 2 tablespoons of hung curd in a bowl and add powdered sugar to it.

    6. Soak 4-5 saffron strands in rose water for about a minute or two.

    7. Pour it in the bowl and blend the content thoroughly.

    8. Next, pound the cardamom pods with a pestle and add it to the shrikhand and mix well.

    9. Sprinkle pistachio pieces and saffron strands on the shrikhand for garnishing.

  • 1. You can add mango pulp to the shrikhand while blending it, to get the famous amarkhand recipe.
  • 2. Whisking the hung curd mixture is a good option to get a smoother consistency.
