Nippattu is a traditional South Indian snack that is prepared during the festive seasons, especially for Diwali. In Tamil Nadu, it is called Thattai and is prepared for most celebrations and joyous occasions. In Andhra Pradesh, nippattu is called chekkalu.

In almost all weddings and festivals in South India, nippattu is a mandatory snack that is prepared and distributed. Nippattus are spicy and crunchy rice crackers that are deep-fried and stored in an air-tight jar. This snack can be preserved for over a month if stored properly.

Serves: 12-14 pieces

Ingredients
  • Split roasted gram (hurigadale) - ½ cup

    Peanuts - ½ cup

    Rice flour - ¾th bowl

    Sooji (chiroti rava) - 2 tbsp

    Maida - 1 tbsp

    Red chilli powder - 1½ tbsp

    Salt - ¾th tbsp

    Hing - ¼th tbsp

    Oil - 2 tbsp + for greasing and frying

    Water - 1½ cups

How to Prepare
  • 1. Add half a cup of split roasted gram in a mixer jar.

    2. Add half a cup peanuts and grind it coarsely and keep it aside.

    3. Add rice flour in a mixing bowl.

    4. Add 2 tablespoons of sooji and a tablespoon of maida.

    5. Add red chilli powder and salt.

    6. Then, add hing and mix well.

    7. Add powdered mixture and mix well.

    8. Add 2 tablespoons of oil in a heated small pan.

    9. Heat the oil for about 2 minutes.

    10. Add it to the mixture and mix well.

    11. Add water little by little and knead it into a medium-soft dough.

    12. Take a plastic sheet and grease it with oil.

    13. Take small portions of the dough and dab them into flat circular shapes on the greased plastic sheet.

    14. Heat oil in a pan for frying.

    15. Carefully, peel the round-shaped dough from the sheet and put them into the oil one after the other.

    16. Fry them for a minute and flip them over to cook on the other side.

    17. Fry them until they turn brown in colour.

    18. Remove from the oil and serve once it cools to room temperature.

  • 1. You can add almonds if you are allergic to peanuts.
  • 2. The consistency of the dough should be that of akki roti.
