Mutton Curry Or Kosha Recipe
Mutton curry is a favourite special dish for the Bengalis during the festive season. Here is the step-by-step procedure for mutton curry or kosha recipe.

Serves: 6-7

Mutton or goat meat - 1.5 kg
Mustard oil- 6 tbsp
Onion sliced or julienned - 1 cup
Ginger - 2-inch piece
Garlic- 8-10cloves
Tomato - 1.5 large
Green chillies - 6-8
Potatoes - 4 large
Plain yogurt or tok doi - 1 cup
Black pepper powder ormorich- 1 tsp
Garam masala powder - 1.5 tsp
Whole dry red chillies - 2-4
Cinnamon - 1-inch stick
Cloves - 5-6
Turmeric powder - 1 tsp
Red chilli powder - 1 tsp
Sugar - 2 tsp
Salt - to taste
White oil

1. The mutton needs to be marinated overnight in the yogurt or dahi, some mustard oil and ½ a teaspoon of turmeric powder.
2. Slice the onion and chop up the tomatoes and then peel and cut the potatoes in halves.
3. Heat the mustard oil in a pressure cooker and then add in the sliced onions.
4. Add some sugar and salt to make the onions turn golden yellow fast.
5. Also, add in the whole garam masala along with the whole dry red chillies and black pepper powder.
6. Next, when the onions have browned nicely, make a paste of the green chillies, ginger and garlic.
7. Add this in and cook for 4-5 minutes.
8. Now, set this mixture aside to cool down.
9. Next, add in more oil and fry the potato halves for a minute.
10. Next, add in the marinated mutton and mix in.
11. Once the fried onion mixture has cooled down, make a fine paste and also make a puree of the tomatoes.
12. Now, add these two pastes to the mutton along with the garam masala powder.
13. Add rest of the turmeric powder and the red chilli powder and mix well.
14. Then, cook well for 10-15 minutes on medium-high heat. This stage in Bengali is known as 'koshano' .
15. After your 'koshano' is over, add in two cups of water and pressure cook the whole thing for 3-4 whistles or 10 minutes on high flame .
16. Let the steam cool down and then open the lid of the cooker. You will be able to see the mutton oozing out its fat and the oil will separate on the top.
17. Taste and check the salt and sugar and fix it if required .
18. Now on low flame, cook the mutton till all the water has evaporated, which can take anywhere between 15 and 20 minutes.
19. The Bengali-style kosha recipe is ready.
- 1. It is best when the mutton is cut in chunky large pieces and has a nice layer of fat.
