Matar kulcha is a famous street food of Delhi that is prepared with white chana and is paired with hot kulchas. Here is a detailed procedure with images and a video.
Matar kulcha is a popular street food that hails from Delhi and is also famous in Amritsar. The kulcha chole is made with cooked white chana or white matar with a whole load of spices, onions and tomatoes. The white chane ke chole is served with hot kulchas in the streets of Delhi.
Kulcha chole is a spicy thick side dish with a dash of tamarind chutney to give it a tangy flavour, and the onions make it crunchy and delicious to eat. Since it is a thick and semi-solid dish, it can be eaten as a finger-licking chole chaat.
The matar kulcha is easy to prepare, since it is only about cooking the white chana and adding the Indian masalas. The white chane ke chole is generally served with kulchas in North India. The kulchas are usually found in ready-made packs and just need to be heated.

MATAR KULCHA VIDEO RECIPE

White matar (white chana) - 1½ cups
Salt to taste
Kashmiri chilli powder - ¾th tsp
Jeera powder - ½ tsp
Amchur powder - ¼th tsp
Freshly ground pepper - a pinch
Tamarind chutney - 4 tbsp
Onions (chopped) - 2
Tomatoes (chopped) - 2
Rock salt - 1½ tsp
Lemon juice - 2 tbsp
Coriander leaves (finely chopped) + for garnishing
Green chilli (split) - for garnishing
Water - 2 cups + for soaking

1. Take the white matar in a bowl.
2. Soak it for 5-6 hours and pressure cook it for up to 4-5 whistles and take the boiled chana in a bowl.
3. Add salt to taste.
4. Add kashmiri chilli powder.
5. Add jeera powder and amchur powder.
6. Then, add a pinch of the freshly ground pepper.
7. Add 4 tablespoons of the tamarind chutney.
8. Then, add the chopped onions and tomatoes.
9. Add rock salt and lemon juice.
10. Mix thoroughly.
11. Garnish it with coriander leaves and split green chilli.
12. Serve it with hot kulchas.
- 1. You can use jaljeera chutney instead of the tamarind chutney.
- 2. You can add tamarind chutney on top as a garnish.
- 3. The kulcha chole can be eaten as such as a chole chaat.
