Maddur vada is an authentic evening snack recipe that is mostly popular in Karnataka. Maddur vada hails from a small town, Maddur, in Karnataka and hence derives its name.

Maddur vada is made of rice flour, sooji, maida and besan as the main ingredients. The onion adds flavour to the vada. It is seasoned with certain spices to make it flavourful. This is then made into palm-sized round shapes and deep fried.

Maddur vada is a flat, crunchy vada, which is soft on the inside and crispy on the outside. Maddur vada is extremely delicious and is an ideal tea-time snack. Ingredients
  • Rice flour - ¾th bowl

    Sooji (chiroti rava) - 2 tbsp

    Maida - 1 tbsp

    Besan - 2 tbsp

    Jeera - ½ tbsp

    Coriander leaves (finely chopped) - 1 cup

    Green chilli (chopped) - 1 tbsp

    Onion (finely chopped) - 1 cup

    Salt to taste

    Hing - ¼th tsp

    Oil - 2 tbsp + for frying

    Water - ¾th cup

How to Prepare
  • 1. Add rice flour in a mixing bowl.

    2. Add sooji and maida.

    3. Add besan.

    4. Then, add jeera and finely chopped coriander leaves.

    5. Add cut green chilli and chopped onions.

    6. Add salt to taste and quarter teaspoon of hing.

    7. Mix well.

    8. Add 2 tablespoons of oil in a small tadka pan.

    9. Heat it up for about 2 minutes.

    10. Pour it on the mixture and mix well.

    11. Add water little by little and knead it into a medium-soft dough.

    12. Heat oil in a pan for frying.

    13. Grease your palm with oil.

    14. Take a small portion of the dough on the greased palm and flatten it with your fingers into a round shape.

    15. Carefully, peel the round-shaped dough and drop it in the oil and fry the vadas on medium flame. You can fry 3-4 vadas at a go.

    16. Flip them over and fry until both the sides turn light brown.

    17. Remove from the oil and serve hot.

  • 1. Make sure the sooji is fine and not coarse.
  • 2. You can add more chillies, if you like the vada to be more spicy.
  • 3. If you feel the dough to be sticky, add more maida and knead it again. Similarly, if the dough is too tough, add a little more water to it.
