There are quite a number of variations to this dish and in this recipe, we are preparing a balanced spicy egg masala recipe.

Egg masala is prepared by boiling fresh eggs, which are mixed with the onion and tomato-based gravy. The different kind of masala powders used, give this dish a special flavour to savour. The aroma of the masala with the whiff of the fresh boiled eggs makes this dish exquisite to taste.

Ingredients
  • Onion - 1

    Tomatoes - 2 (medium size)

    Green chilli - 1

    Eggs - 3

    Salt - 1 tsp

    Coriander leaves - ½ cup + for garnishing

    Pudina leaves - ½ cup

    Oil - 6 tbsp

    Ginger and garlic paste - 1 tsp

    Turmeric powder - ½ tsp

    Jeera powder - 1 tsp

    Salt - 2 tsp

    Red chilli powder - 1 tsp

    Chicken masala powder - 2 tsp

    Water - ½ cup

How to Prepare
  • 1. Add eggs in a saucepan.

    2. Add enough water for the eggs to be completely immersed into it.

    3. Add a teaspoon of salt and allow it to hard boil for 15 minutes.

    4. Meanwhile, take an onion and cut the top and bottom portions of it.

    5. Cut it into half and further cut it into medium-sized pieces.

    6. Take a tomato. Remove the top hard part of it.

    7. Cut it into half and further cut it into medium-sized pieces.

    8. Take a green chilli and cut it into small pieces.

    9. Take half a cup of coriander leaves and chop them finely.

    10. Take pudina leaves and chop them finely as well. Keep it aside.

    11. Now, add oil to a heated pan.

    12. Add the cut onions and sauté well for a minute.

    13. Add the cut green chillies along with ginger and garlic paste. Mix well.

    14. Add the chopped pudina and sauté until the raw smell of the pudina goes away.

    15. Further, add turmeric and jeera powder.

    16. Add salt and red chilli powder.

    17. Fry the masala well.

    18. Add the cut tomatoes and cook until they become soft.

    19. Add the chicken masala powder and half a cup of water.

    20. Allow it to cook until the masala becomes like a gravy.

    21. Now, peel off the soft egg shells and transfer them into a bowl.

    22. Then, cut each egg into a vertical half.

    23. Place them in the gravy.

    24. Put the dry gravy on top of each cut egg.

    25. Transfer them onto a plate.

    26. Garnish it with coriander leaves and serve.

Instructions
  • Make sure to use fresh eggs and use more water to hard boil the eggs
  • It is optional to add only the red chilli powder instead of the green chillies
  • Any other masala powder instead of chicken masala powder can also be used
  • Vegetables can be chopped finely if you want the egg masala to be in a complete gravy's consistency
