Cold vegetable sandwich is a popular breakfast recipe that can be prepared during busy days. The cold sandwich can be prepared in many ways. Here is a recipe with hung curd, mayonnaise and some vegetables added to it and spread on the bread as a sandwich.
The hung curd and mayonnaise sandwich is simple to prepare and can be made in a jiffy on a busy morning. This sandwich is an on-the-go recipe and is an ideal lunch-box or breakfast box meal.
The mayonnaise adds a good flavour to the cold sandwich. Along with the hung curd, this sandwich is delectable. In the recipe below, we have avoided cheese to make it a healthier option. White sandwich bread - 4 slices
Hung curd - 3 tbsp
Mayonnaise - 2 tbsp
Mixed herbs - 2 tsp
Powdered sugar - 2 tsp
Salt - to taste
Black pepper (crushed) - to taste
Grated carrot - 3 tbsp
Cucumber (finely chopped) - 3 tbsp
Capsicum (finely chopped) - 3 tbsp
Coriander leaves (finely chopped) - 1 tbsp

1. Add hung curd in a bowl.
2. Add mayonnaise and mixed herbs.
3. Then, add the powdered sugar.
4. Add salt and pepper.
5. Add the grated carrot and cucumber.
6. Then, add capsicum and mix thoroughly.
7. Add coriander leaves and mix well, and keep it aside.
8. Take the white sandwich bread and cut the edges.
9. Spread a thick layer of the hung curd mix evenly on to the bread slice.
10. Place another bread slice on top.
11. Cut it across diagonally and serve.
- 1. You can add bell peppers, onions or other vegetables of your preference in the filling.
- 2. It is not necessary to cut the edges of the bread.
- 3. You can use a cheese spread instead of the hung curd as well.
