1. Carrot Porridge

Ingredients

• Carrots - 1 medium-sized
• Cardamom powder - a pinch
• Raisins- 1 tbsp
• Dates - 3
• Water - as required
• Ghee - 1/2 tsp
• Formula milk/breast milk -1/4 cup
• Powdered jaggery or jaggery syrup - 1 tsp optional

Directions

• Wash and soak the dates and raisins and in water for 15 minutes.
• Wash carrots in running water and peel off the skin.
• Chop the carrot into small cubes, and steam/pressure cook them until soft.
• Then, blend the soft carrots with soaked raisins and dates until the desired consistency is reached.
• Heat the ghee in a pan, add cardamom powder and jaggery (optional), cook for two minutes.
• Add the milk while the mixture is warm and mix well.

• Peel and chop the carrots into same-sized pieces.

• Puree the mix until smooth (you can add water to thin out the consistency).

Ingredients

• Carrot - 2
• Olive oil - 1 tbsp

Directions

• Preheat oven to 425 degrees F.
• Toss the carrots in olive oil and spread evenly on a large baking sheet.
• Bake for 20 minutes.
• Remove from oven and let it cool for 10/15 sec before adding to the blender.
• Blend until smooth.

• Water - 2 cups
• Carrot - 2
• Almonds - 6-8
• Whole milk/breast milk/water - 1 cup
• Ghee - ¼ tsp

Directions

• Soak the almonds in water for 6 hrs (do not use warm/hot water).
• Peel the carrots and chop into cubes.
• Blend the carrots, milk and almonds till smooth.
• Do not make the puree too runny.
• Pour water in a pan and when it comes to a rapid boil, place a bowl with the puree in it and make sure the water from the pan does not enter the puree bowl.
• Stir occasionally and cook for 15 minutes,
• Add jaggery (optional) and ghee and let it melt.
• Cook for another three minutes and leave it in the water for another 15 minutes.

5. Carrot-Sweet Potato Puree

Ingredients

• Chopped sweet potatoes 3-4
• Chopped carrots 3-4 cups
• Water - 4-5 cups

Directions

• Boil or steam the sweet potatoes and carrots separately until they are tender.
• Transfer the carrots and sweet potatoes in the blender and blend to the desired consistency.
• If your baby likes sweetness, then you can add more sweet potatoes than carrots.

• Diced carrots - 3-4 cups
• Rice - 6-7 cups
• Water - 9-10 cups

Directions

• Cook rice with diced carrots in a pot for 20-25 minutes.
• Cook till rice and carrots are soft.
• Mix the carrot and rice well before serving.
• You could add more water if the mixture is thick.

7. Carrot-Peas Puree

Ingredients

• Peas - 2 cups
• Carrot - Diced, 2 cups
• Water - 4-5 cups

Directions

• Boil the peas and carrots, separately or together.
• Transfer the cooked vegetables to a blender and puree them.

Directions

• Cut the carrots lengthwise, so each carrot would make three to four sticks.
• Steam, bake or keep them crunchy for older infants.

• Boil the chicken and carrots separately until tender.
• Retain the chicken stock as it can be used in the blending process.

• Add warm water to thin the consistency if needed.
