Ingredients:
- 1 sliced red onion
- 1 tbsp avocado oil
- A handful of lettuce
- ¼ cup walnuts, roughly chopped
- ½ cup cherry tomatoes, halved
- 1 cup mixed berries
- ½ cup raspberry vinaigrette
- 100 g goat cheese, crumbled
- Pinch of sea salt and black pepper
- Preheat the oven to 350 degrees.
- In a bowl, toss onions, walnuts, avocado oil, sea salt and black pepper.
- Then place the ingredients on a baking sheet and roast it for 15-20 minutes. Keep it aside to cool.
- In another bowl, toss lettuce, cherry tomatoes, goat cheese, berries, roasted onions, walnuts and raspberry vinaigrette. Serve and enjoy.
