  • 4 cups shredded fresh spinach

Directions

  • Combine the black beans, apricots, bell pepper, scallion, cilantro, and garlic in a medium bowl.
  • Then, combine apricot nectar, oil, rice vinegar, soy sauce, and ginger and shake well.
  • Pour it over the bean mix.
  • Cover with a foil and refrigerate for 2 hours.
  • Add the spinach and mix well.
