Cucumber Chicken Recipe

Adding cucumber in this chicken recipe adds a unique flavour to the dish. This is also an excellent recipe for kids since this chicken recipe is not very spicy and tastes extremely delicious. This unique dish goes very well with steamed rice and chapatis.

Cucumber Chicken Recipe

So, try out cucumber chicken recipe this weekend and have a hearty and lip-smacking meal.

Ingredients

  • Chicken- 1kg
  • Potatoes- 2 (cubed/diced)
  • Cucumber- 1 big (finely chopped) for marination; 1 medium (for garnishing)
  • Yogurt- 1 cup
  • Capsicum- 1
  • Onions- 2
  • Tomato- 1
  • Ginger- 1 piece
  • Garlic- 3-4 pods
  • Salt- as per taste
  • Sugar- a pinch
  • Cardamom- 2 (finely grounded)
  • Cinnamon- 2 (finely grounded)
  • Turmeric powder- ½ tsp (for marination); ½ tsp (for cooking)
  • Red chilli powder- ½ tsp (for marination); ½ tsp (for cooking)
  • Coriander powder- ½ tsp (for marination); ½ tsp (for cooking)
  • Cumin powder- ½ tsp(for marination); ½ tsp (for cooking)
  • Chicken masala powder- 1tsp
  • Green chilli- 2-3 (slit)
  • Mustard oil- 2 tsps for marination; 2 tsps for cooking

Procedure

  1. Marinate chicken with yogurt, cucumber, salt, turmeric powder, red chilli powder, cumin powder, coriander powder, salt, sugar, mustard oil and keep it aside for 2 hours.
  2. Grind capsicum, onions, tomato, ginger and garlic into a thick paste in a mixer. Keep it aside.
  3. In a wok, fry the potato cubes till golden brown. Keep them aside.
  4. Now nicely fry the thick paste till the oil gets separated and add turmeric powder, red chilli powder, cumin powder, coriander powder, salt to it one by one.
  5. Add the marinated chicken, chicken masala powder, fried potatoes, green chilli and cook until done.
  6. Season with cardamom-cinnamon powder.
  7. Garnish with cucumber pieces and serve hot with rice/ chapattis/ any type of bread.

(Note: You can use 2-3 sprigs of freshly chopped coriander/ cilantro leaves as a substitute for cardamom-cinnamon powder.)
