Shahi Kaju Sabji

This is a regal dish taken from the Mughlai cuisine and improvised to suit our food habits. This spicy dish is made of cashew nuts with a mix of special aromatic spices which makes it extremely delicious. The sweet cashews are roasted and cooked in a creamy gravy of onions and tomatoes, the aroma of which is enough to make your mouth water.

Shahi Kaju Sabji

The recipe for shahi kaju sabji is quite straightforward and simple. It is an ideal recipe if you have some very special friends or family coming over for lunch. Since cashews are loved by all, you will not have to face the problem of feeding the kids something else. They will definitely enjoy it.

So, try out this new and extremely delicious Indian recipe for making shahi kaju sabji.

Ingredients

  • Cashew nuts- 1 cup
  • Tomatoes- 3 (pureed)
  • Onions- 2 (peeled and quartered)
  • Ginger-garlic paste- 1tsp
  • Cinnamon- 1 inch piece
  • Cloves- 3
  • Green cardamoms- 3
  • Coriander seeds- 1tsp
  • Cumin seeds- ½ tsp
  • Sugar- 1tsp
  • Dry red chillies- 4-5
  • Turmeric powder- 1tsp
  • Kasuri methi- ½ tsp
  • Garam masala- ½ tsp
  • Amchur powder (dried mango powder)- ½ tsp
  • Salt- as per taste
  • Coriander leaves- 2tsp(chopped)
  • Oil- 2tbsp
  • Water- 1½ cup

Procedure

  1. Take around 5-6 cashew nuts out of the lot and grind them along with the onions, cinnamon, cloves, cardamoms, coriander seeds, cumin seeds, dry red chillies and half a cup of water into a smooth paste.
  2. Now heat 1tbsp of oil in a pan and roast the rest of the cashew nuts for 3-4 minutes until they turn golden brown. Once done, remove from the flame and keep it aside.
  3. Now heat oil in the same pan and add the onion paste you prepared earlier to it. Cook it for 5 minutes on medium flame.
  4. Add the ginger-garlic paste and stir for another 2 minutes.
  5. Now add the pureed tomatoes, garam masala, turmeric powder, amchur powder and keep stirring for 2 minutes.
  6. Crush the kasoori methi between your palms and add to the masala.
  7. Add salt, sugar and a cup of water. Allow the curry to boil.
  8. Now add the roasted cashew nuts to the gravy and let it simmer for 5 minutes.
  9. Once done, remove from flame. Garnish the curry with chopped coriander leaves

Serve this shahi kaju sabji with basmati rice or parathas. Enjoy this rich and creamy delight.
