The vegetable cheese sandwich is an Indian dish that is a combination of mint chutney with vegetables. It is undoubtedly one of the healthiest breakfasts you can make.

Recipe For Vegetable Cheese Sandwich

All You Need

For Sandwich

Bread- 10 slices
Onion- 2 (roundly sliced)
Tomato- 2 (roundly sliced)
Cucumber- 1 (roundly sliced)
Potato- 1 (boiled and roundly sliced)
Cheddar cheese- ¾ cup (grated)
Butter- 3 tbsp
Pepper- ½ tbsp

For Chutney

Mint leaves
Coriander leaves
Green chilli- 2-3 nos.
Ginger- ½ (chopped)
Chaat masala- ½ tbsp
Salt- To taste
Lemon juice- 3-4 tbsp

Procedure

1. Take the ingredients for chutney, add a little water and put it in a mixer. Make sure that you mix it with very little water because the chutney has to be slightly thick or not too watery. Once it is done, keep this chutney aside.
2. Now, take the bread slices and apply butter evenly on the slices. Then, spread the mint chutney evenly on all the slices.
3. Place the onion, tomato, cucumber and potato in between two slices of bread. Sprinkle the pepper evenly on the vegetables.
4. Add grated cheese on top of these vegetables and cover the sandwiches.
5. Pre-heat the sandwiches on a toaster or grill and toast it till the bread becomes golden brown. Once it is done, apply butter on the toasted sandwich.

#Tips

  • If you want your sandwich to be healthy, use brown bread instead of the regular milk bread.
  • If your kids are not too keen on sandwiches, cut out the outer thick portion of the bread and serve it. They would not be able to resist a vegetable cheese grilled sandwich with mint chutney when served this way.
