Soan Papdi: Soft Diwali Sweet

Diwali is one of the biggest Hindu festivals. According to the Hindu mythology, Lord Rama defeated demon King Ravana and returned to Ayodhya. People lighted diyas and lamps, burst crackers to celebrate the victory of good over evil and the return of Rama.

Since then, Diwali has being recognised as the festival of lights where people light up their houses with lamps (traditional or new rope lights), decorate their houses and draw rangolis. They also wear new outfits, perform Lakshmi Puja and then burn crackers.

Soan Papdi: Soft Diwali Sweet

Like other festivals, sweet delicacies are prepared to celebrate the festive mood. Soan papdi or soan papdi or sonpapri is a square shaped crispy and flaky sweet dish. The recipe is very easy and you can prepare it at home itself. Check out the recipe to make soan papdi.

Soan papdi, Diwali sweet recipe:

Serves: 12-15 soan papdis
Preparation time: 5 minutes
Cooking time: 15 minutes

Ingredients

  • Besan/gram flour- 1 ½ cups
  • Maida/all purpose flour- 1 ½ cup
  • Milk- 2tbsp
  • Sugar- 2 ½ cup
  • Cardamom powder- 1tsp
  • Water- 1 ½ cups
  • Polythene sheet
  • Ghee- 250gms

Procedure

  • In a bowl, sift besan and maida together.
  • Now heat ghee in a frying pan. When the ghee becomes hot, roast the flour in it for few minutes until they turn light golden brown. Stir so that it doesn't stick to the pan.
  • Meanwhile, boil water in a deep bottomed pan. Add sugar, milk and prepare a syrup on medium flame. Stir at short intervals to melt the sugar. When the syrup becomes thick, put it off flame and let it cool.
  • Once the flour is roasted, spread it on a clean and dry plate. Let it cool. Grease a thali or baking dish with ghee.
  • When the flour is cool, add it slowly to the sugar syrup. Stir with a whisk and when you see the threadlike flakes forming, pour it into the greased thali or baking dish. Make sure it is at least 1 inch high.
  • Sprinkle cardamom powder. Let it cool.

Cut the soan papdi into small squares. Cover with polythene sheets. Garnish with chopped nuts like pistachios and almonds.
