Yummy Pathar Gosht Recipe

This being the holy month of Ramzan and special delicacies being made around, lets share with you one of the famous Ramadan recipes of 2015 - "Pathar Ka Gosht" (Meat Cooked on a Stone). This is a special Ramadan mutton recipe which is a must try during the holy season. It is also a classic and very popular Hyderabadi recipe.

Preparing this recipe is a long procedure, but the outcome is worth every minute of your time spent. Pathar Ka Gosht is basically marinated for an long time and the mutton is cooked on a hot granite stone over charcoal and direct fire.

To make this dish, you can use a heavy-bottomed saucepan if you don't have a stone. This Pathar Gosht recipe can also be prepared in a Barbeque style. You can enjoy this delicious Pathar Gosht recipe served with semiya, onion rings and lemon wedges.

Pathar Gosht Ramzan Special

Serves: 6-8
Preparation Time: 6 hours
Cooking Time: 1 hour

You will need
Sliced Boneless Mutton -1 Kg
Granite stone (unpolished slab)

For Marinade
Ginger garlic paste -1 tbsp
Red chilli powder -1 tbsp
Turmeric powder - ¼ tbsp
Meat Tenderizer Powder - 2 tbsp
Raw Papaya paste -2 tbsp
Garam Masala - 1 tbsp
Black Pepper powder - 1 tbsp
Green chilli paste - 1 tbsp
Lemon juice - 1 tbsp
Milk - 500 ml
Salt to taste
Ghee 500gm

For Garnishing You Need
Onion rings - 1 cup
Lemon wedges - 3 -4
Coriander Leaves - 1 bunch (chopped )
Mint Leaves - 1 bunch (chopped )

Method:

Marinade 1:
Add boneless slice of mutton, ginger garlic paste, green chilli paste, meat tenderiser powder, lemon juice, and raw papaya paste in a bowl & mix well.
Marinate the mutton and set it aside for an hour.

Marinate 2 :

Add ghee, red chilli powder, turmeric, black pepper, garam masala, and salt to the meat in the same bowl.
Mix all the ingredients well. Cover the bowl with a plastic wrap.
Lett the meat marinate for about 3 - 4 hours in a cold place.

Procedure:

  1. Heat the granite stone over charcoal, for about 30 minutes.
  2. Sprinkle few drops of water on the surface of granite stone and check if its hot (If the water sizzles then the stone is ready).
  3. Now add the marinated gosht on the hot stone.
  4. The marinated meat releases its juices when on the pan.
  5. Allow the meat to cook in its own liquid until all the liquid evaporates.
  6. Add about half a litre of milk to the meat on the stone and keep frying the mutton until all the liquids evaporate.
  7. Fry the meat on both the sides until it is golden brown in colour
  8. Remove the meat from the stone and serve

Tip: Garnish this meat with lemon juice, coriander and mint leaves.

Nutrition Tip: The marinated meat is rich in proteins and carbohydrates which help the body recover the lost nutrients.
